Strawberry Soup For A Hot Summer Day |

Now that strawberries are in full swing around here, I pulled out this old recipe my mother made for us when she still lived in MN and we were visiting. I remember it was a hot summer day, and she had chilled this overnight, so it was cold and delicious and refreshing. Read more . I hope to make it soon so I can post a picture of this pretty summer side dish. Ingredients:
1 pint strawberries, cleaned and hulls removed |
1 cup sour cream |
sugar to your taste (it all depends on how sweet you berries are) |
3 tablespoons brandy |
2 cups liquid coffee creamer |
8 additional strawberries, cleaned and cut in half, for garnish |
chocolate syrup (not hot fudge sauce - it is too thick...you just need a runny chocolate sauce that you can drizzle over the soup just before serving) |
whipped cream, optional |
Directions:
1. In a blender, chop cleaned strawberries into fine pieces. 2. Add sour cream, sugar and brandy; blend until smooth. 3. Add coffee cream and blend just until mixed in. 4. Pour into container, cover and chill well before serving. 5. To serve, pour the soup into small bowls, float 4 strawberry halves on top and drizzle quickly with a small amount of chocolate sauce. 6. For a special effect , put a couple dollops of whipped cream around the outer edges of the soup (or use the canned whipped cream and create a couple swirls of it on top of the soup) 7. NOTE: When my mother made this, there wasn't the variety of liquid coffee creamer flavors we now have in the refrigerated section of the market. I am going to experiment with some flavored creamers, like Vanilla, or Hazelnut - see what you come up with! |
