This light, refreshing soup is a fine start (or end) to a meal.
Ingredients:
3 1/2 cups halved strawberries (about 1 pound)
1 1/4 cups pineapple juice
2 tablespoons sugar
1 tablespoon fresh lemon juice
1/8 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
dash of ground cardamom (optional)
1 1/3 cups plain low-fat yogurt
2 teaspoons grated lemon rind
Directions:
1. Place first 7 ingredients in a blender or food processor; process until smooth. Add yogurt; process just until blended. Chill for 3 hours. Sprinkle each serving with lemon rind.
