Strawberry Soaked Pound Cake |

Ingredients:
1 cup butter, softened (no substitutes) |
1/2 cup shortening |
1 (3 ounce) package cream cheese, softened |
2 1/2 cups sugar |
5 eggs |
3 cups cake flour |
1 teaspoon baking powder |
1/2 teaspoon salt |
1 cup buttermilk |
1/4 teaspoon lemon juice |
1 teaspoon vanilla extract |
strawberry ice cream topping |
sliced fresh strawberries |
Directions:
1. In a large mixing bowl, cream butter, shortening and cream cheese. 2. Gradually add sugar, beating until light and fluffy. 3. Add eggs, one at a time, beating well after each addition. 4. Combine the dry ingredients; add to creamed mixture alternately with buttermilk. 5. Stir in lemon juice and vanilla extract. 6. Pour into a greased and floured 10 inch fluted tube pan. 7. Bake at 325°F for 1 hour and 20 minutes or until a toothpick inserted comes out clean. 8. Cool for 10 minutes; remove from pan to a wire rack. 9. Serve with strawberry topping slathered all over the top and sliced fresh strawberries. |
