This is amazing! I tried it for my first time ever a few days ago, and I have no more muffins left! It makes 12 BIG muffins! It tastes like a strawberry danish, honestly! My family, friends, and I adore it! Everyone requests me to make this, and they always ask me for the recipe! Read more ! ple ple Please tr Ingredients:
1 3/4 c all purpose flour |
1/4 c cornstarch |
1/2 c sugar |
2 tsp baking powder |
1/2 tsp salt |
1 c buttermilk |
1 egg |
1/2 tsp vanilla |
1/4 c butter, melted |
10 strawberries, washed, dried & sliced |
crumble |
3/4 stick unsalted butter, melted |
1/4 c packed light brown sugar |
1/4 c granulated white sugar |
1/4 tsp cinnamon |
1 c + 1 tblspn flour (+extra if needed) |
Directions:
1. Grease & flour a standard muffin/cupcake pan. Preheat the oven to 425F. 2. 2. Whisk together flour, cornstarch, sugar, baking powder & salt, & set aside. In another small bowl combine the melted butter, buttermilk, vanilla & beaten egg. Stir in to the flour mixture. Stir just to incorporate, do not overmix - it will be lumpy. 3. 3. Pour into the muffin pan, filling each cup about 2/3 full. Gently insert the strawberry slices into the batter so that they are vertical (they will stand up and down in the batter). 4. Sprinkle with crumb topping. 5. 4. Bake 15 - 18 minutes, or until the crumb topping is browned, and a toothpick inserted into the muffin comes out clean with only moist crumbs. 6. Crumb: 7. 1. Whisk together the butter, sugars, cinnamon and salt until smooth. 8. 2. Stir in the flour with a whisk, then stir with a butter knife to create the crumbly texture. Add more flour as needed to create the correct crumb size. 9. 3. Sprinkle on to muffin tops - crumb topping with dry up and crisp in the oven. 10. TIPS: When I made this recipe, i loved it! There's nothing wrong with it at all, maybe next time! Ill take the amount of strawb. stated in the recipe, and dice it up, and put it in the bowl with a tablespoon or so of sugar and let that sit for a little. Then, at the end add them! Also, I might add next time about a tablespoon or so of straw. extract. Lastly, I'm also thinking about putting a tablespoon or so of crumble in the middle of the muffin, for example, ill put a little batter in a muffin cup, then a little of the crumble recipe, and the rest of the batter, with the finishing crumble as well! Although, you might want to make more crumble then! Trust me, follow the recipe exactly and you'll love it, hopefully you'll take my advice as well!!! You wont be disappointed!! **Enjoy!!!** =] |
