I have found several recipes, vintage, if you will that might remind some of the baby-boomers and older of another time in our history. I would like to share some of them with you. As in earlier times, when money was a little harder to come by,this old-fashioned recipe is made with cooked rice and a few of the usual suspects, gelatin, pineapple, nuts, are you beginning to remember? If you do,maybe you would like to make this again, and if you don't maybe you would like to try it anyway, because this is a wonderful dish, that I truly hope you will enjoy. Cooling time is cooking time. Plan ahead, this is better made the day before you plan to serve it.
Ingredients:
2 (4 ounce) packages strawberry gelatin
2 cups boiling water
3/4 cup cold water
1 cup cooked cold rice
1/2 cup milk
1 cup sweetened whipped cream
1 (12 ounce) can crushed pineapple, with juice
1/2 cup chopped nuts
Directions:
1. Dissolve gelatin in boiling water; add cold water.
2. Chill until it starts to congeal.
3. Fold in rice, milk, whipped cream, pineapple and nuts;
4. Chill until firm.
