I have not made this yet but intend to very soon. Posting this for the 2005 strawberry recipe swap contest. Cooking times are approx. because I don't know how long it takes until the mixture mounds . Ingredients:
1 (9 inch) pie shells, prebaked |
1 (3 ounce) package strawberry gelatin |
1/4 cup sugar |
1 1/4 cups boiling water |
10 ounces frozen strawberries |
1 tablespoon lemon juice |
3 ounces cream cheese |
1/3 cup confectioners' sugar |
1 teaspoon vanilla extract |
1/8 teaspoon salt |
1 cup heavy cream |
Directions:
1. In a small saucepan combine strawberry gelatin, sugar and boiling water. 2. Add strawberries and lemon juice, mix well. 3. Refrigerate. 4. Stir every half hour until mixture mounds. 5. Then whip the cream cheese in a seperate bowl with the confectioner's sugar , vanilla and salt. 6. In a third bowl whip the heavy cream to soft peak stage. Fold the whipped cream cheese mixture into the whipped cream. 7. Pour this mixture into the pie shell. 8. Pour the strawberry mixture over that, refrigerate until ready to serve. |
