Strawberry-Rhubarb Muffins |

These are soo good especially when made with in season fruit!!!!!! Ingredients:
1 3/4 cups flour |
1/2 cup sugar |
2 1/2 teaspoons baking powder |
3/4 cup chopped rhubarb |
3/4 cup sliced strawberry |
1 egg, slightly beaten |
3/4 cup milk |
1/3 cup oil |
Directions:
1. Mix flour,sugar& baking powder together in a large bowl. 2. Combine egg, milk & oil in a small bowl. 3. Stir this into flour mixture with a fork just until moistened. 4. Fold in rhubarb & strawberries. 5. Pour into greased muffin tins. 6. sprinkle top with a bit of white sugar. 7. Bake 20-25 minutes until golden brown. |
