Strawberry & Raspberry Coffee Cupcakes |

Cute delicious single serving coffee cakes. Ingredients:
2 cups all-purpose flour |
1 cup sugar |
4 teaspoons baking powder |
1 teaspoon salt |
2 eggs, beaten |
1 cup milk |
2 teaspoons vanilla |
1/4 cup butter, melted |
1 cup raspberries |
2 cups strawberries, diced |
1/4 cup cornstarch |
1 cup all-purpose flour |
1 cup sugar |
1/2 cup butter, cold |
1/2 cup rolled oats |
Directions:
1. In a mixing bowl, add the flour, sugar, baking powder and salt; stir to mix. 2. In a second bowl, add the egg, milk, vanilla and butter; stir to mix; add to dry ingredients and stir just until moistened. 3. Fill cupcakes liners until about half full. 4. Toss strawberries & raspberries with corn starch. 5. Place approximately 1 tablespoon of berries evenly over the top of batter in each cupcake. 6. To make the topping: Combine the flour and sugar in a bowl. 7. With a pastry blender, cut in the butter until consistency of coarse crumbs. Stir in oats. 8. Sprinkle mixture evenly over the strawberries (about a heaping tablespoon per cupcake). 9. Bake at 375° for 25-30 min minutes or until wooden pick comes out clean. 10. Cool and enjoy! |
