i 'invented' this cake to celebrate the coming of spring - and to brighten up the day of my son (he had surgery), his wife and baby-son. i was told it was good :-) Ingredients:
either buy a ready-made three-layered spong cake (i did) or bake your own sponge cake in a 10 spring form |
cut it twice horizontally to obtain three layers |
2 baskets of strawberries (two pounds) |
2 tablespoonsgrand marnier, about |
1 tub mascarpone |
1 tub whipping cream |
2 tbsp. whole milk |
1 package whipping cream stabilizer |
1 can cream of coconut |
2 tbsp confectioners sugar, approx. |
1 package raffaelos, chilled |
for decoration |
12 of the prettiest strawberries |
or chocolate leaves |
some fresh green pepper corns (i get them out of the glass) - very optional |
Directions:
1. sprinkle bottom layer withorange liqueur, i used Grand Marnier 2. beat mascarpone with milk,sugar, the whipping cream and the cream of coconut, the wh.cream stabilizer 3. spread on bottom layer 4. put strawberries (halved if VERY large) on perimeter, 5. then add one 'circle'of halved Raffaelos 6. (that is SOME job, believe me, but it is easier when Raffaelos are well chilled), 7. add another 'circle' of strawberries, 8. then some more Raffaelos if there is room 9. cover with another layer of sponge cake 10. sprinkle this layer with Grand Marnier, 11. proceed as before, 12. put on the third layer, covering it with the cream, 13. then cover the sides of the cake with the cream mixture as well 14. now decorate with the whole strawberries, 15. chocolate leaves and, 16. if you like (I did) 17. make a short make-believe stem with the green peppercorns. 18. cool and fridge for about wo hours before serving 19. i was told it was some flavour-experience to have the strawberries and cream and one pepeprcorn in the mouth! 20. you may want to hide some of the green pepper in one of the layers - SURPRISE! |
