Strawberry Quinoa Porridge |

Celebrate Spring with strawberries, walnuts and quinoa. Ingredients:
* 1/4 cup quinoa, dry |
* 1/4 cup 100% orange juice |
* 1/2 cup water |
* 5 medium berries strawberries |
* 1/4 cup walnuts chopped |
* 1 tsp cinnamon ground |
* 1/2 tsp nutmeg, ground |
* 1 tbsp fresh mint |
Directions:
1. Bring the water and OJ to a boil and add the spices and quinoa. 2. Reduce heat and cover to simmer for about 15 minutes. 3. Slice the strawberries. 4. Toast the walnuts. 5. Toss in the walnuts and strawberries when the quinoa is cooked. 6. Serve warm. |
