Strawberry-Pina Colada Pie |

A great dessert for a beginner cook. From Kraft. Ingredients:
35 vanilla wafers, finely crushed (about 1-1/4 cups) |
1/4 cup butter, melted |
1 (8 ounce) cream cheese, softened |
1/4 cup milk |
1 (3 1/2 ounce) instant vanilla pudding |
1 (8 ounce) can crushed pineapple in juice, undrained |
1 (8 ounce) non-dairy whipped topping, thawed, divided |
1/4 cup flaked coconut, toasted |
1 1/4 cups sliced fresh strawberries |
Directions:
1. Mix wafer crumbs and butter until blended; press into bottom and up side of 9-inch pie plate. 2. Beat cream cheese and milk in large bowl with mixer until blended. Add dry pudding mix and pineapple; beat 2 minute Whisk in 2 cups whipped topping; pour into crust. 3. Refrigerate 3 hours or until firm. Top with coconut, berries and remaining whipped topping just before serving. |
