This is a three layered cake and is quite easy to make looks and tastes great, the only problem with this cake is that it does not last long. Read more . So great minds think alike. Ingredients:
1 box white or yellow cake mix (approx 18 t0 20 ounces) |
1 cup vegetable oil |
4 large eggs |
1 cup flaked coconut |
1 pack (3 oz) strawberry flavoured gelatin |
1/2 cup milk |
1 cup mashed fresh strawberries or frozen ( if frozen , drain some juice off and reserve) |
1 cup chopped pecans |
strawberry cream cheese icing |
1 pack (8 oz) cream cheese, room temp |
2 oz margarine, room temp |
1 teaspoon vanilla extract |
1/2 cup chopped pecans |
1/2 cup mashed strawberries (drain and reserve juice) |
5 to 6 cups sifted powdered sugar (1 to 1 1/2 pounds) |
Directions:
1. Preheat oven 180c / Gas 4 2. Generously grease and flour 3, 8 or 9 inch round layer pans 3. Mix cake mix with strawberry flavored gelatin. Add eggs, coconut, and milk, and beat well until well blended 4. Stir in 1 cup of mashed strawberries and 1 cup of pecans 5. Bake for approx 35 minutes, or until when lightly touched with finger it springs back. 6. TO MAKE ICING 7. Cream together cream cheese and butter, mix in the vanilla and the powdered sugar until a firm but spreadable consistency is achieved 8. Stir in drained strawberries and pecans 9. Drizzle cooled layers with reserved juice then spread with a layer of icing 10. Ice sides and top 11. refrigerate |
