Ingredients:
1 teaspoon(s) baking soda |
3 teaspoon(s) cinnamon |
4 eggs, beaten |
3 cup(s) flour |
1 1/2 cup(s) fresh strawberries, mashed |
1 1/4 cup(s) pecans, chopped |
1 teaspoon(s) salt |
1 small can crushed pineapple, drained (if desired) |
2 cup(s) sugar |
1 teaspoon(s) vanilla extract |
1 cup(s) vegetable oil |
Directions:
1. Heat oven to 325 degrees. Grease and flour three loaf pans. 2. Combine flour, sugar, cinnamon, baking soda, and salt in a large mixing bowl. 3. In a separate bowl, combine oil, eggs, and vanilla. Add egg mixture to flour mixture and mix thoroughly. Stir in strawberries, pecans, and pineapple, if using. 4. Bake 50 minutes, or just until a toothpick inserted in the center comes out clean. 5. Let loaves cool in pans for 15 minutes, then turn out on a wire rack until completely cooled. |
