I tried this recipe with Fiber One's pancake mix as it's base to get in that extra fiber. It's also very tasty with half a mashed banana added. I recommend topping with diced bananas and strawberries tossed with a little lime juice and some extra apple butter - so good! Ingredients:
1 cup complete pancake and waffle mix |
2 tablespoons sugar |
1/4 teaspoon ground ginger |
2 tablespoons fat free egg substitute |
1/2 cup apple butter |
1/2 cup 1% low-fat milk |
1/2 cup fresh strawberries, chopped |
Directions:
1. Whisk sugar, mix, and ginger in a bowl. 2. In another bowl whisk milk, apple butter, and egg substitute. 3. Stir together wet and dry until well blended. 4. Gently fold in strawberries. 5. Cook and serve. |
