this is another strawberry recipe that is on my list to make in a couple of weeks when the strawberries start to ripe here... one thing about this recipe that I do not know is how much sugar is in a packet of vanilla sugar. 1 cup (125g) flour |
1 cup (250ml) milk |
salt |
3/4 cup (175g) sugar |
5 eggs |
1 cup (250g) low fat curd cheese |
1 package vanilla sugar |
2 egg yolk |
1 tablespoon lemon juice |
1 cup strawberries |
butter |
1/4 cup almond slivers |
Directions:
1. Mix flour, milk, 1/2 cup sugar, 5 eggs and a dash salt. Put all ingredients into blender and blend until smooth. Let pancake dough rest for 30 minutes. 2. Mix low fat curd cheese with the rest of sugar, vanilla sugar, 2 egg yolks and lemon juice. Put all ingredients into blender and blend until smooth. Wash strawberries and filter them through colander (put a few strawberries aside for decoration). Add strawberries to curd cheese mixture. 3. Put butter into a pan and heat. Bake 8 pancakes. Spread strawberry cream onto each of the pancakes and roll them. 4. Decorate the pancakes with almond splitters and strawberries. 5. Serves: 4 |
