This salad is so colorful and delicious! Its great for company or a special Sunday dinner. I hope you enjoy it as much as my entire family does. Ingredients:
1 egg white |
1/4 cup sugar |
1 cup sliced almonds |
2 tablespoons butter |
1 bunch red leaf lettuce, torn |
1 (11 ounce) can mandarin oranges, drained |
1 quart strawberry, thinly sliced |
1 green onion, sliced |
1/4 cup vegetable oil |
2 tablespoons raspberry vinegar |
2 teaspoons honey |
1/2 teaspoon orange zest |
1/8 teaspoon salt |
Directions:
1. Beat egg white on high with a mixer until foamy. Add sugar a little at a time, beating 2 to 3 minutes until stiff peaks form and sugar dissolves. Fold in almonds. 2. Melt butter in a small pan or pie plate in a 325 degree oven. Add almonds to pan, and bake, stirring every 5 minutes, 30 - 35 minutes or until lightly browned and dry. Cool in pan on a wire rack. 3. Toss lettuce and next three ingredients in a large bowl. 4. Whisk together oil and next four ingredients; drizzle over salad (use as little or as much as you like) and toss gently. Sprinkle with sugared almonds and serve. |
