Strawberry Orange Cornbread |

This is my own original recipe and it turned out very good indeed. It is a moist, coarse textured , cake like cornbread, excellent warm as well as room temperature. One can taste the strawberries even better when served at room temperature. Read more . I served it with my vegetarian chili but it would be great accompaniment with any meal. Enjoy! Ingredients:
6-8 large strawberries, cleaned and hulled |
1 naval orange , peeled ( use some orange zest if desired ) |
1/4 cup milk ( approx )- i used skim milk not buttermilk but next time i will try with buttermilk |
2 cups yellow cornmeal |
1 cup white flour |
1 tsp baking soda |
2 tsp baking powder |
1/4-1/2 cup sugar for sweetness ( i used 1/2 cup ) |
dash salt |
2 eggs |
1/2 cup oil |
Directions:
1. Liquefy strawberries and orange pulp in blender 2. Add enough milk if needed to make two cups puree 3. In another bowl combine all the dry ingredients 4. In another small bowl combine the oil and the eggs and then blend into the strawberry orange mixture 5. Combine the wet ingredients into the dry ingredients and mix well to combine 6. Pour batter into a greased 10 x 10 square pan or similar pan where batter will fill 1/2 full 7. Bake in a preheated 375 F oven 30 minutes or until tested done in center with wooden toothpick 8. Serve warm or at room temeperature |
