These muffins are delicious-I love strawberries, so I make these often! :) Ingredients:
1 1/2 c. chopped fresh strawberries |
1/2 c. white sugar |
1/4 c. white sugar |
1/4 c. margarine, softened |
2 eggs |
1 tsp. pure vanilla extract |
1 3/4 c. ap flour |
1/2 tsp. baking soda |
1/4 tsp. salt |
1/4 tsp. nutmeg |
Directions:
1. In a small bowl, combine the strawberries and 1/2 c. sugar. 2. Set aside for 1 hour. 3. Drain, reserving liquid and berries separately. 4. Preheat oven to 425 degrees F. 5. Grease a 12 cup muffin tin, or line with paper liners. 6. In a medium bowl, cream together margarine and 1/4 c. sugar until light and fluffy. 7. Beat in eggs one at a time, then stir in vanilla. 8. Combine flour, baking soda, salt and nutmeg; stir into the creamed mixture alternately with the juice from the strawberries. 9. Gently stir in the strawberries. 10. Spoon batter into the prepare muffin cups. 11. Bake for 18-20 min. in the preheated oven, or until the tops spring back when lightly touched. 12. Cool in the pan on a wire rack. 13. Enjoy! :) |
