I found this lovely berry studded muffin in the Best of Bridge Ingredients:
2 cups flour |
1/2 cup sugar |
1/2 cup nonfat dry milk powder |
1 tablespoon baking powder |
1/2 teaspoon salt |
1 egg, beaten |
1/2 cup butter, melted |
1/2 cup skim milk |
1 cup strawberry, chopped |
1 teaspoon lemon juice |
1/2 teaspoon lemon rind |
Directions:
1. In a bowl, combine the flour, sugar, dry skim milk, baking powder and the salt. Combine well. 2. In a large bowl, combine the egg, butter, skim milk, strawberries, lemon juice and rind. 3. Combine the wet ingredients with the dry until just combined. Place in prepared muffin tins. 4. Preheat oven to 400. 5. Bake the muffins for 15 - 20 minutes or until cooked. |
