Strawberry Mousse Squares |

This is a good summer time recipe when you don't want to run your oven because of the heat. Also nice since strawberry season should be nearly here. Ingredients:
2/3 cup boiling water |
1 pkg. (4-serving size)strawberry flavor gelatin |
18 oreo chocolate sandwich cookies, crushed |
1/4 cup (1/2 stick) butter, melted |
1 pkg. (8 oz.) cream cheese, softened |
2-1/2 cups thawed cool whip whipped topping, divided |
3 cups small strawberries, sliced, divided |
Directions:
1. Stir boiling water into dry gelatin mix in small bowl at least 2 min. 2. until completely dissolved. Cool 5 min., stirring occasionally. 3. Meanwhile, mix cookie crumbs and butter; press onto bottom of 13x9-inch pan. 4. Beat cream cheese in large bowl with electric mixer on medium speed until creamy. Gradually add gelatin, beating well after each 5. addition. Gently stir in 1-1/2 cups each of the whipped topping and 6. strawberries. Spoon over crust. 7. Refrigerate 1 hour or until firm. Cover with remaining whipped 8. topping. Serve topped with the remaining strawberries. Store 9. leftovers in refrigerator. |
