According to Dr. Sears, THE ZONE DIET, the strawberry contains ellagic acid, an amazing compound, also found in grapes and cherries, that has been show t prevent carcinogens from turning healthy cells into cancerous one. You can usually find strawberries year round in the produce section, but their peak is usually spring through mid-summer.
Ingredients:
3 cups strawberries
2 tablespoons brown sugar
1 cup cottage cheese
4 tablespoons egg whites
6 teaspoons almonds
6 teaspoons yogurt
Directions:
1. Clean and core the strawberries, blend with the brown sugar, and let marinate for two hours.
2. In a food processor fitted with a steel blade, puree the strawberries.
3. Add the cottages cheese and pure again. Add the Just Whites and puree for uniformity.
4. Finally, add the dissolved gelatin, then pulse until thoroughly combined.
5. Pour into six chilled wineglasses.
6. Cover each with plastic wrap and refrigerate until the mousse is set.
7. Top with the plain yogurt and strawberries and sprinkle almonds on top when ready to serve.
