Serve over mixed greens or fresh baby spinach for a colorful side salad or starter. You can chill goat cheese in the freezer for five minutes to make crumbling it easier. Ingredients:
3 cups quartered strawberries (about 1 pound) |
1 tablespoon chopped fresh mint |
1 tablespoon balsamic vinegar |
1/4 teaspoon freshly ground black pepper |
1/2 cup (2 ounces) crumbled goat cheese |
Directions:
1. Combine quartered strawberries, chopped mint, balsamic vinegar, and black pepper; toss gently to combine. Cover and chill 1 hour. Sprinkle evenly with crumbled goat cheese. Serve immediately. |
