My son loves to help make and devour this jam in little sandwiches. I like that since I made it, I know what is in it. I got it from a Sesame Street Silly Snacks cook book, which was designed for cooking with your kids. Ingredients:
16 ounces frozen whole strawberries or 16 ounces mixed berries |
1/2 lemon, lemon juice from |
1/3-1/2 cup sugar (depending on how sweet you want your jam) |
Directions:
1. Stir the frozen berries and sugar in a 2-quart measuring cup or other microwave-safe dish. 2. Microwave, uncovered, on HIGH for 2 minutes. 3. Stir and cut the large berries into smaller pieces. 4. Add the lemon juice and stir. 5. Return the dish to the microwave and cook for ten minutes, stirring after 5 minutes. 6. Watch the mixture and stir again, if needed, to prevent the jam from boiling over. 7. Test the thickness of the jam by putting a spoonful on a small saucer and placing it into the freezer for a minute. This is about how thick your jam will be when it is cooled. 8. If you want thicker jam, microwave for 2 to 4 more minutes, stirring as needed. 9. Allow the jam to cool. Pour it into storage containers. Jam will keep in the refrigerator for up to 2 weeks, and in the freezer for 3 months. |
