Strawberry Ice-Cream Sodas |

Ingredients:
1 1/2 cups milk |
1 1/2 cups strawberry syrup |
1 quart strawberry ice cream |
chilled seltzer to taste |
garnish: whipped cream |
1 pound (about 1 1/4 pints) strawberries, hulled and sliced |
1/2 cup sugar |
Directions:
1. Make strawberry syrup: In a food processor fitted with the steel blade or in a blender in batches, puree the strawberries, transfer the puree to a stainless steel or enameled saucepan, and stir in the sugar and 1/2 cup water. Bring the mixture to a boil over moderate heat, stirring, and simmer it for 3 minutes. Force the mixture through a fine sieve into a bowl and chill it, covered, for at least 3 hours. Makes about 1 1/2 cups 2. Make the sodas: In each of 6 ice-cream soda glasses, combine 1/4 cup of the milk and 1/4 cup of the syrup, add 2 or three scoops of the ice cream to each glass, and fill the glasses with the seltzer. Garnish the sodas with the whipped cream. |
