Healthy version of a summer favorite. Came from Good Housekeeping Magazine, 2010
Ingredients:
1 lb frozen strawberries
1 cup of 2% plain greek yogurt
1/4 cup sugar
1/2 teaspoon vanilla extract
Directions:
1. In a food processor with a knife blade, pulse 1 cup of strawberries until finely chopped. Transfer to large metal bowl.
2. Puree yogurt, sugar, vanilla, and remaining strawberries in the food processer until smooth. Transfer to bowl with the chopped strawberries and stir until well combined.
3. Cover and freeze about one hour-until firm but not hard.
