A summer dessert. Ingredients:
2 cups fresh strawberries |
3 egg whites |
1/2 cup sugar, divided |
fresh mint (optional) |
Directions:
1. Combine half of the pureed strawberries with a quarter of the sugar. Cover and refrigerate. 2. In a large bowl, beat egg whites until soft peaks form. Add remaining sugar, slowly, until a meringue forms and is thick and glossy in appearance. 3. Put meringue in freezer container, cover and freeze until solid (about 1 hour). 4. Spoon sweetened strawberry puree into dessert bowls. 5. Top with frozen meringue. Garnish with fresh mint sprigs. |
