I found this recipe in the Richard Simmons Food Mover Cookbook and made some adjustments to it. (See the Splenda and egg substitute). Ingredients:
1 cup flour |
1 1/2 cups skim milk |
1/2 cup egg substitute |
1 tbsp egg substitute |
1/2 teaspoon splenda |
2 cups fresh strawberries |
1 tbsp brown sugar |
1 tbsp whipped topping |
Directions:
1. Slice strawberries and mix with brown sugar. 2. Mix remaining ingredients with an egg beater. 3. Spray a non-stick frying pan with cooking spray. 4. Heat over medium-high heat until hot. 5. Pour 1/4 cup batter into pan, tilting pan to coat the bottom. 6. When bottom is lightly browned, turn with rubber spatula. 7. Remove finished crepe from pan and keep warm while cooking the other crepes. 8. Fill with strawberries, roll up, and serve. |
