This super- simple dessert comes from the January 2009 issue of recipes + magazine. It can be ready in minutes, looks very elegant, and nobody needs to know how easy it was!! You can use any baerries you want. Ingredients:
250 g strawberries, thickly sliced |
1/4 cup orange juice |
2 tablespoons icing sugar |
4 frozen crepes |
8 scoops low-fat vanilla ice cream, to serve |
icing sugar, to dust |
Directions:
1. Place strawberries, juice and icing sugar in a glass bowl. toss to combine. Let stand for 5 minutes. 2. Microwave crepes, one at a time, on High for 20 seconds or until hot. Fold crepes in half, then half again to form a triangle. Transfer to serving plates. 3. Top crepes with strawberries and ice-cream. Drizzle with strawberry liquid; dust with icing sugar. |
