I don't remember where I found this recipe, but it's delicious. You bite into a muffin and a surprise greets you! It's a big bite of strawberry slathered in cream cheese. So very , very good! Ingredients:
2 cups flour |
1 cup sugar |
1 tablespoon baking powder |
1 teaspoon salt |
4 tablespoons butter, melted |
1/4 cup oil |
3/4 cup milk |
2 eggs |
1 teaspoon vanilla |
1/2 pint strawberries |
8 ounces cream cheese |
Directions:
1. Preheat oven to 350 degrees. 2. Whip the cream cheese until light and fluffy. Place cheese in a ziplock bag, snip the corner off the bag and set aside. 3. Sift all the dry ingredients together. Make a well in the center. 4. Blend the butter, oil, milk and eggs together. 5. Fold the wet and dry ingredients together. 6. Spoon the batter into paper-lined muffin tins. 7. Place one or two berries in the center of each muffin. 8. Squeeze about 1 tablespoon of cream cheese into the muffin batter, on top of the strawberries. 9. Bake for 30 to 40 minutes. If you test the muffin with a toothpick, do not test directly in the center. Test about 1/2 inch from the edge. 10. NOTE: You can omit the strawberries and replace with 8 ounces of blueberries, raspberries, chocolate chips, nuts, or anything you choose. |
