The Muffin Lady by Linda Fisher and Andrew Marton Ingredients:
2 cups flour |
1 cup sugar |
1 tbs baking powder |
1 tsp salt |
4 tbs butter |
1/4 cup oil |
3/4 cup milk |
2 eggs |
1 tsp vanilla extract |
1/2 pint strawberries, whole |
8 ounces cream cheese |
Directions:
1. Preheat oven to 350 degrees. 2. Sift together all the dry ingredients. Make a well in the center. Blend in the remaining ingredients except the strawberries and cream cheese. Spoon the batter into a wax paper-lined 12-unit muffin pan. 3. Place 1 or 2 berries in the center of the batter in each muffin mold. Whip the cream cheese and place in a small pastry bag with a 4 tip (or cut off the corner of a plastic sandwich bag). 4. Squeeze about 1 tbs of cream cheese into and on top of the strawberries. Bake for 35-40 minutes. |
