I had to share this while the strawberries are in season and oh so sweet. This is a simple, quick dressing to make with the abundant berries. Serve over fresh fruit (so good over pears or apples), angel-food or sponge or just about any plain cake, or top your pancakes with some slices bananas or blueberries and a scoop of this dressing. Read more . It’s very refreshing and bursting with strawberry flavor, but the sour cream and brown sugar give it a nice flavor change. See my note at the end of directions for some “grown up” addition ideas.
Ingredients:
1 cup sour cream
2 tablespoons of brown sugar (just add this to your taste – the amount depends on how sweet the strawberries already are)
a dash of salt
1/4 cup mashed fresh strawberries (you can puree them, too, but i like the small chunks that i get if i just mash them with a potato masher)
Directions:
1. Stir brown sugar and salt into sour cream until smooth and brown sugar dissolves.
2. Fold in mashed strawberries.
3. Taste and add more sugar, if necessary, to your likeness.
4. Cover and chill a few hours before serving.
5. NOTE: for a “special” twist, stir in about 1 tablespoon of Grand Marnier or other favorite liqueur. I’ve only tried Grand Marnier, but I’m thinking things like Godiva White Chocolate liqueur, or Limoncello, Calvados, etc, could also add an interesting flavor…experiment!
