Use some strawberries to brighten up your next batch of corn muffins! Ingredients:
1 cup flour |
1 cup cornmeal |
3 tbsp sugar |
4 tsp baking powder |
1/2 tsp salt |
3/4 cup milk |
1/2 stick butter, melted |
1 egg, beaten |
1/2 cup chopped strawberries(or more if you want) |
butter to serve with muffins. |
Directions:
1. Preheat oven to 425 and line a 12 cup regular muffin pan with paper liners. 2. Mix together dry ingredients in a bowl. 3. Add milk, melted butter and beaten egg and mix with a fork. Muffin batter should be slightly lumpy, not smooth. 4. Gently fold in strawberries. 5. Divide batter between the muffin cups. 6. Bake 12-15 minutes or until golden brown. 7. Serve hot with lots of butter. |
