From Cooking Light: Add liqueur to this jam for flavor that's reminiscent of an old-fashioned cordial. If you prefer, substitute 2 tablespoons black currant syrup plus 1 tablespoon fresh lemon juice for the liqueur. Keep this refrigerated for up to one month. Ingredients:
6 cups chopped strawberries (about 1 1/2 pounds) |
1 cup sugar |
3 tablespoons creme de cassis (black currant flavored liqueur) |
1 tablespoon water |
1/8 teaspoon ground cinnamon |
1/8 teaspoon ground cardamom |
Directions:
1. Combine all ingredients in a medium saucepan over medium-high heat; bring to a boil. Reduce heat, and simmer until reduced to 2 cups (about 1 hour and 10 minutes), stirring occasionally. Cool completely; cover and chill 8 hours. |
