Ok, this is a secret recipe I was told but they're great. It's kinda like the strawberry cake we've all made and loved except in cookie form. These do not brown in the oven so don't try to leave them there until you do or you'll have a mess. Ingredients:
for the cookies |
1/4 cup shortening |
1/4 cup cream cheese |
1/2 cup butter (lightly salted) softened |
1 1/4 cups powdered sugar |
2 1/4 cups all purpose flour |
3 tablespoons mashed strawberries |
1 teaspoon vanilla flavoring |
1 teaspoon almond extract |
for the icing |
1/4 cup softened butter. |
2 1/2 cups powdered sugar |
1/2 teaspoon strawberry flavoring |
2 tablespoons mashed strawberries |
Directions:
1. For the cookies: 2. Cream shortening, cream cheese and butter until fluffy. 3. Add powdered sugar, mix well. 4. Stir in flour 5. Add flavorings and strawberries. 6. Shape dough into 1 1/2 inch balls. 7. Place on ungreased cookie sheet. 8. Press lightly to flatten to about 1/4 inch (or form into heart/strawberry shapes). 9. Bake at 325 degrees for 12 to 15 mins. 10. Cookies will not brown. 11. For the icing: 12. Combine all ingredients with a mixer. 13. Spread on cookies as soon as they are removed from oven. 14. After cookies cool slightly on baking sheet, place them on cake rack to cool completely. |
