Strawberry Coconut Muffins |

Very easy to make! Ingredients:
1/2 cup sugar |
1/4 cup butter |
1/4 cup water |
1 1/2 cups flour |
1 beaten egg |
1 cup whole wheat flour |
2 teaspoons baking powder |
1 cup frozen strawberries, diced |
1/2 cup shredded coconut |
1 teaspoon vanilla extract |
1 cup milk |
Directions:
1. Heat oven to 400°. 2. Gently heat the sugar, butter and water until the sugar dissolves; let cool. 3. Combine flour, baking powder, strawberries and coconut. 4. Mix vanilla extract, egg and milk; add to the flour mixture. 5. Pour in the butter mixture and mix just until combined. 6. Spoon into prepared muffin tins. 7. Bake 15-20 minutes. |
