Strawberry Cinnamon Muffins |

One of my mom's old recipes. They have a subtle cinnamon flavor. Ingredients:
2 eggs |
2/3 cup sugar |
1/2 cup milk |
1/4 cup plain yogurt |
1 teaspoon vanilla |
1/4 cup butter, melted and cooled |
2 cups all-purpose flour |
1 tablespoon baking powder |
1/4 teaspoon salt |
1/2 teaspoon ground cinnamon |
1 1/2 cups strawberries, cut into chunks |
Directions:
1. In a mixing bowl, whisk the eggs and sugar together until light and frothy. 2. Add the milk, yogurt, vanilla, and melted butter; whisk gently. 3. In another mixing bowl, add the flour, baking powder, salt, and cinnamon. 4. Add the milk mixture to the dry indgredients; stir just until moistened. 5. Gently fold in berries. 6. Spoon batter into greased muffin cups; muffin cups should be 3/4 full. 7. Bake at 375 degrees for 25 minutes or until pick comes out clean. 8. Remove muffins from pan and cool on a wire rack. |
