Strawberry Cinnamon Cornbread |

I encountered the original savory recipe in a health cookbook, but I tweaked it a little to convert it into this sweet version. It's obviously open to different flavor substitutions. The cinnamon is an approximate measurement, however, so feel free to change it. Ingredients:
1 cup unbleached flour |
1 cup cornmeal |
1/4 cup sugar |
1 teaspoon baking soda |
1/2 teaspoon salt |
1 egg, plus |
2 egg yolks |
10 ounces strawberry yogurt (or whichever flavor you prefer) |
1/4 teaspoon cinnamon |
1/2 cup raisins (or whichever dried fruit you prefer) |
Directions:
1. Preheat oven to 400 degrees. 2. Mix dry ingredients in a large bowl. 3. Beat eggs. 4. Mix egg, yolks, yogurt, cinnamon, raisins, and stir until combined. 5. Stir wet ingredients into dry ingredients. 6. Pour or scoop batter into a greased (or coated with cooking spray) 9 X 9 pan and bake for 20 minutes. 7. Eat until gone. 8. Repeat steps 1-7. |
