Strawberry Cheesecake Pie |

A great dessert for a summer picnic or BBQ...nothing says summer like fresh strawberries. Very pretty and refeshing. Ingredients:
1 10'' graham cracker crust |
16oz cream cheese, softened |
3/4c granulated sugar |
4 eggs |
2tsp orange zest |
1/4c orange juice |
approx. 1 pint of strawberries or use any fresh fruit you desire |
1/4c orange juice |
2tsp cornstarch |
4tsp water |
2tsp sugar |
Directions:
1. Beat cream cheese and sugar until smooth; add eggs one at a time beating well after each addition. Mix in orange juice and zest. 2. Pour into prepared crust. Bake at 350F for 35-40mins or until set but still still slightly jiggly. Cool to room temperature, cover and chill. 3. Arrange strawberries decoratively over top of pie. 4. Mix orange juice, water, sugar and cornstarch in small saucepan. Cook until thickened and clear, cool slightly then brush carefully over berries. 5. Chill at least 2 hours. 6. Serve with sweetened cream and a few mint sprigs. |
