Strawberry Cheesecake Brownies |

Found this recipe from Pilsbury and made these to take to a cookout over 4th of July weekend. They were really easy to make, and a huge hit with everyone. Ingredients:
non-stick cooking spray or margarine (i use margarine) |
1 (19.5 oz.) package fudge brownie mix for 13x9 pan |
1/2 cup vegetable oil |
1/4 cup water |
4 large eggs, divided |
3/4 cup chopped walnuts (optional) |
2 (8 oz.) packages cream cheese, softened |
1 (14 oz.) can sweetened condensed milk |
1/3 cup lemon juice (i used fresh squeezed) |
1 teaspoon vanilla extract |
1/2 cup seedless strawberry jam - i used strawberry preserves |
Directions:
1. BROWNIES: 2. HEAT oven to 350°F. 3. Spray a 13x9-inch baking pan with no-stick cooking spray. 4. Combine brownie mix, oil, water and 2 eggs in large bowl; stir 50 strokes with spoon. 5. Stir in nuts, if desired. 6. Spread into prepared pan. 7. Bake 20 minutes. 8. CHEESECAKE FILLING: 9. BEAT cream cheese until fluffy in large bowl. 10. Gradually beat in sweetened condensed milk. 11. Mix in remaining 2 eggs, lemon juice and vanilla until smooth. 12. Pour evenly over warm brownie. 13. STRAWBERRY TOPPING 14. STIR jam until smooth. 15. Drop by teaspoonfuls over surface of filling. 16. With a knife, swirl jam gently through filling to create marble effect. Bake additional 35 to 40 minutes or until top is lightly browned. 17. Cool 1 hour. 18. Loosely cover and chill in refrigerator for 2 hours or more. 19. Cut into bars. |
