Strawberry Cheesecake And White Chocolate Muffins |

If you love strawberries, then you'll enjoy these muffins! Serve for a breakfast treat or dessert! : ) Ingredients:

6 ounces cream cheese, at room temperature |
1/4 cup sugar |
1 egg |
1/4 tsp vanilla extract |
1 cup white chocolate chips |
muffin batter |
2 cups self rising flour |
3/4 cup sugar |
4 tablespoons butter, melted but cooled |
1/4 cup oil |
1/3 cup milk |
1/2 cup fresh or frozen strawberries, chopped into small pieces |
2 eggs |
1 teaspoon vanilla extract |
frosting |
4 ounces cream cheese, at room temperature |
1/8 cup pureed fresh or frozen strawberries |
1/4 cup powder ( confectioners) sugar |
1/4 teaspoon vanilla extract |
Directions:
1. Preheat oven 350 degrees 2. line muffin pan with paper muffin cups 3. To make filling: 4. Blend cream cheese and sugar until smooth 5. Add 1 egg and vanilla extract beat just until combined 6. set aside. 7. Muffin batter: 8. combine flour, sugar, melted butter,oil, milk,strawberries,eggs and vanilla. 9. Blend only until everything is combinded. 10. Fill muffin cups with batter until 1/3 full, spoon in 1 table spoon cream cheese mixture and then place 5 white chocolate chips on cream cheese mixture. Then fill with more batter until 3/4 of the way full. 11. Bake for 30-35 minutes until edges are lightly browned. 12. To make Frosting: 13. Blend cream cheese until smooth,add strawberry puree, powdered sugar and vanilla extract. Blend until smooth. 14. Frost muffins when they cool down and then put them in the refrigerator for a little bit to set the frosing and enjoy!! |
