Little tart shells filled with a lemony creamy filling, with a bit of strawberry surprise. Ingredients:
1/2 cup of strawberry preserves |
1 and 1/2 packages of those little sweet tart shells from the freezer case, (6.3 oz. box) |
8 oz. of cream cheese, softened |
1/4 cup of limoncello |
2 tbsp of lemon juice |
3/4 cup of whipping cream |
1/4 cup of confectioner's sugar |
1/2 tsp. of vanilla extract |
1/2 tsp of grated lemon zest |
2 quarts of fresh strawberries, washed, stemmed and halved |
Directions:
1. Put a 1/2 tsp of strawberry preserves in the bottom of each tart shell. 2. This is easier to do if the preserves are not refigerated, but at room temperature. 3. Beat the cream cheese with the Limoncello and the lemon juice. 4. You can substitute some lemonade concentrate if you don't want to use the Limoncello. Set aside. 5. Whip the whipping cream, adding sugar and extract with lemon zest til soft peaks form. 6. Fold whipped cream to cream cheese mixture. 7. Fill each tart shell with lemony cheese filling. 8. Top with halved strawberry. |
