This is my uncle's favorite cake. Ingredients:
cake |
3/4 cup sifted cake flour |
1/2 tsp. baking powder |
1/2 tsp. salt |
4 eggs |
3/4 cup sugar |
1 tsp. vanilla extract |
powdered sugar |
filling |
1 tsp. unflavored gelatin (like knox gelatin) |
1 cup whipping cream, whipped |
2 tbsp. powdered sugar |
3/4 cup sliced fresh strawberries |
Directions:
1. Cake: 2. Sift first three ingredients together in a separate bowl 3. Beat eggs in mixing bowl with mixer on high speed until thick 4. Add sugar gradually, beting well after each addition 5. Stir in vanilla extract 6. Gently fold in the flour mixture just until blended 7. Spread evenly in buttered 10 x15 jelly roll pan lined with buttered and floured waxed paper 8. Bake at 375 degrees for 8-10 minutes 9. Remove cake from oven and turn out onto a tea towel sprinkled liberally with powdered sugar 10. Peel waxed paper off the bottom of the cake 11. Roll up the cake in the towel as for jelly roll (start rolling from the 15 side of the cake, your towel will roll right along with the cake) 12. Let stand for 20 minutes to cool 13. Filling: 14. Soften gelatin in 1/4 cup water in saucepan 15. Cook over low heat until dissolved, stirring constantly; cool 16. Fold cooled gelatin and powdered sugar into whipped cream 17. Chill covered for 5-10 minutes 18. Unroll cake and spread with filling 19. Spoon 3/4 cup sliced fresh strawberries over the top 20. Roll up cake, removing towel 21. Chill for 1 hour or longer 22. Top with remaining whipped cream and whole strawberries |
