This very easy to make is a spectacular ending to your party. Ingredients:

1/2 cup all-purpose flour |
1/4 cup cornstarch |
1 tsp. baking powder |
2 large eggs, separated |
1 tbs. vegetable oil |
2/3 cup granulated sugar, divided |
2egg whites |
1tbs. confectioner's sugar |
for filling |
1 cup all-fruit strawberry preserves |
2 cups sliced strawberries |
Directions:
1. 1 Preheat oven to 350ยบ. Line a jelly-roll pan with waxed paper. Spray with vegetable cooking spray. In a medium bowl, mix flour, cornstarch, and baking powder. 2. 2 In a large mixing bowl, using an electric mixer set on medium speed, beat egg yolks, oil, and 1/2 cup of granulated sugar until light and fluffy. At low speed, beat in flour mixture. 3. 3 Using clean beaters, beat 4 eggwhites at high speed until frothy. Beat in remaining granulated sugar until stiff, but not dry, peaks form. Fold one-third of beaten egg whites into flour mixture; fold in remaining egg whites. 4. 4 Spread batter into prepared pan. Bake until golden, about 12 minutes. Sprinkle confectioners' sugar over a clean cloth. Turn cake out onto cloth and remove waxed paper. Starting with a short edge, roll up cake with cloth. Place seam-side down, on a wire rack and cool. 5. 5 To prepare filling, unroll cake; spread with strawberry preserves and strawberries. Re-roll cake, place on a serving platter. |
