Fresh sweet strawberries straight from the garden makes this dish even more stellar. Do not chill strawberries or it will start converting the sugars to starches. Taken from Cooking Light 1997. Ingredients:
1/3c sugar |
2t all-purpose flour |
1 egg, lightly beaten |
1 1/2c (1%) low-fat milk |
1t vanilla extract |
1c sliced fresh strawberries |
3t brown sugar |
Directions:
1. Combine sugar, flour, and egg in a medium saucepan. Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture thickens. Remove from heat; stir in vanilla. Cover and chill thoroughly. 2. Place strawberries evenly in 6 (3/4 cup) oven-proof ramekins or custard cups. 3. Spoon custard mixture evenly over strawberries, and sprinkle evenly with brown sugar. Place ramekins on a baking sheet. Broil 5 1/2 from heat (with electric oven door partially opened) 2 to 3 minutes ro until sugar melts. Serve immediately. 4. 115 calories, 1.6g fat per serving. |
