This is a moist bread that is so great for deserts or for gifts. I love to do it in mini loaf pans! Ingredients:
-4-5 cups of slicked fresh strawberries or (2) 10oz. packages frozen strawberries. |
-4 eggs |
-3 cups flour |
-1 tbsp. cinnamon |
-1 tsp salt |
-1 1/4 cup vegetable oil |
-2 cups sugar |
-1 tsp baking soda |
-1 cup chopped walnuts (optional) |
Directions:
1. Preheat oven to 350 degrees. 2. Grease and flour 2 loaf pans or a 9x13in cake pan. 3. In a medium bowl, stir together strawberries, eggs and oil. 4. In a large bowl, blend together all dry ingredients (including nuts). 5. Stir strawberry mixture into dry mixture. 6. Put into loaf or cake pan(s) 7. Bake for 1 hour or until toothpick comes out clean. |
