In the summertime with fresh strawberries everywhere, how could you not make this bread? Ingredients:
3 cups all-purpose flour |
2 cups sugar |
1 teaspoon baking powder |
1 teaspoon baking soda |
1 teaspoon salt |
1 teaspoon ground cinnamon |
1 1/4 cups oil |
4 eggs |
1 teaspoon vanilla extract |
1 teaspoon strawberry extract |
2 1/2 cups fresh or frozen strawberries-chopped(if using frozen, thaw first) |

1 cup powdered sugar |
2 tablespoons milk |
1 teaspoon strawberry extract |
Directions:
1. In a large mixing bowl, sift together flour, baking powder, baking soda,salt, and cinnamon. Add sugar and stir to combine. 2. Make a well in center. 3. Combine oil, extracts, eggs,and strawberries. Add to dry ingredients and stir until well mixed. 4. Pour batter into two well greased 9 x 5 loaf pans and bake in a preheated 350 degree oven for 45 minutes or until loaves test done. 5. Cool 10 minutes in pans then turn out onto wire rack. 6. Glaze: 7. Combine ingredients and stir until smooth. Pour over warm loaves. 8. Serve warm or cooled. 9. Suggestions: 10. Nut lovers may add 1 cup chopped pecans or walnuts to batter before baking. 11. Substitute 1 cup strawberries for two medium mashed ripe bananas for strawberry banana bread. |
