Another recipe from Remlinger Farms, a berry farm north of Seattle. Ingredients:
10 oz package of frozen strawberries, thawed but not drained |
2 eggs |
3/4 c oil |
1 1/2 c flour |
1/2 tsp baking soda |
1 c sugar |
1 tsp cinnamon |
Directions:
1. Puree strawberries in a blender. 2. Whisk eggs and oil in a small bowl. 3. In a large bowl, combine the flour, soda, sugar and cinnamon. 4. Add the strawberries to the flour mix and beat well with a spoon. 5. Add the egg and oil and beat well. 6. Pour into a greased 9x5 loaf pan. 7. Bake at 325 for 70 minutes. 8. Remove loaf from pan 5 minutes after taking the loaf from the oven and cool completely on a rack. |
