A very simple and easy dessert. My all time favorite. Unfortunately, berries is out of the season right now, so I just had strawberries on my tart. Ingredients:
1 package of (pepperidge farm puff pastry) or any other type. (6 shells) |
6 fresh or frozen strawberries |
1 cup of fresh or frozen blueberries |
powdered sugar |
vanilla cream filling |
6 tbsp sugar |
2 tbsp cornstarch |
1 tbsp butter |
1 cup milk |
2 beaten egg yolks |
1/2 tsp vanilla extract |
Directions:
1. Thaw pastry according to the box's instruction. 2. In a pan, combine sugar, starch, and gradually add milk, stirring constantly. 3. Cook and stir over medium heat until the filling becomes very thick and begins to bubble. 4. Remove from heat and slowly pour egg yolks into pan and stirring constantly. 5. Cook and stir mixture over low heat. Add in butter and vanilla extract. 6. Transfer filling to bowl and set aside. 7. Bake puff pastry shells according to package directions. 8. After baking, lift shells in the middle and spoon about 2 tablesppon of vanilla cream filling into each pastry shell. 9. Top with strawberry and blueberries and dust with powdered sugar. Serve immediately. 10. TIPS: You can put pastry in a cupcake pan and brush with butter before baking. Substitute other fruits if you dislike berries. Try peaches or kiwis. |
