a nice side for a light lunch served alongside some grilled chicken or fish Ingredients:
2 cups strawberries |
1 large avocado |
1/4 cup walnuts |
1 large lemon |
2 lemons, juice of, reg |
1/4 teaspoon apple cider vinegar |
1 teaspoon aged balsamic vinegar |
1 cup plain yogurt |
Directions:
1. Wash and slice strawberries. 2. Slice and add to bowl. 3. Chop walnuts set aside. 4. Cut avocado in 1/2 and remove pit. Scoop out the avocado 1/2's. 5. Cut into cubes add to bowl. 6. Add apple cider vinegar to lemon juice. 7. Add lemon juice mixture to fruit - toss to coat. 8. Add nuts to bowl. 9. Add balsamic vinegar to plain yogurt. You may add more to achieve the consistency you prefer. 10. Stir. 11. Serve over salad. |
