Eye-catching, beautiful salad, perfect for springtime, colorful in green and red. Light, refreshing and delicious. A nice twist to heavy winter salads and perfect for brunch. Ingredients:
for the salad |
2-3 tablespoons strawberry vinegar |
1/4 tsp salt |
1/8 tsp pepper |
3 tablespoons spanish virgin olive oil |
8 cups watercress |
1 1/2 cups strawberries, cut lengthwise into thick slices |
1/3 cup goat cheese, crumbled |
for the strawberry vinegar |
3 cups strawberries, trimmed |
2 tablespoons sugar (optional if berries are not sweet) |
2 cups balsamic vinegar |
Directions:
1. Whisk together vinegar, salt and pepper in a small bowl, then add oil in a thin stream, whisking well. 2. Arrange watercress and strawberries in a large bowl and toss with just enough vinaigrette to lightly coat. 3. When serving, sprinkle the goat cheese on top. 4. Making the Strawberry Vinegar: 5. Process berries and sugar in a food processor until juicy. Transfer to a bowl and add vinegar and let stand 1 hour. Push vinegar thorough a sieve into a bowl, discarding solids. 6. Vinegar will keep, covered and chilled, one week. |
